Sol de Oaxaca Mezcal Reposado is made using 100% agave Espadin grown for a minimum of 6 years. The harvested agave hearts are cooked in a traditional underground oven for 3 days. After the agaves are cooked they are milled using machinery. The mixture of fiber and juice is loaded into fermentation vats, sometimes as large as 10,000 liters. Fermentation is closely monitored, and when the time is right it is time to distill. The mezcal is double-distilled and then purified before being aged in barrels.
