The agave Tepeztate used in this mezcal took 20-25 years to reach maturity. Once cooked, the agave was crushed by ox-drawn tahona and single distilled in a copper refrescadora still. The other release is made by Reina Sanchez in San Luis Amatlan. She makes her mezcal with agave that were cooked in a pit oven, mashed by hand with mallets, and double distilled in a copper still.
