The Sierra Juárez mountains that surround the town make a perfect climate and terrain for agave Tepextate, which prefer to grow on the sides of steep slopes and on the sides of cliffs. This mezcal may taste slightly different from other mezcal made with agave Tepextate because the agave are grown among coffee, mango, wild fruit trees and sugar cane. During the 20-25 years that it takes for the Tepextate to mature, they pick up the terroir of these other elements growing near them. The ABV of each batch may vary slightly.
